Labor

• Ensures that high quality food standard is maintained.
• Train staff on basic hygiene and related HACCP and Halal Standards.
• Monitor food sample collection by the laboratory staff and food samples to clients if requested.
• Verify quality and safety conditions of all raw materials.
• Monitor B & I to ensure that food safety and hygiene is not compromised.
• Ensures that all items in stores are well maintained.
• Monitor the production process by verifying that all standards are well maintained.
• Ensure that portioned meal weights correspond to the relevant menu specs.
• Carry out monthly food tests.
• Monitor operational procedures like temperature controls.
• Ensure that all first Aid Boxes are fully stocked and manage all first aid requirements.
• Support corrective and Preventive actions implementations.
• Oversee the overall sanitary conditions.
• Collect all injury on duty data.
• Ensure all staff respect food safety procedures.
• Monitor the cold room temperatures CCP2 as per schedule.
• Ensure all chemical dispensers are working well, and report any dispenser failures to chemical supplier.
• Ensure appropriate and timely corrective actions for any failures in the system, (Oprps, PRPs and CCPs).
• Provide record sheets and color codes to all user departments.
• Verify all CCP, Oprp and other control records.
• Supervise the cleaning team to ensure respect of the cleaning plan.
• Conduct traceability tests on a weekly basis.
• Conduct building inspections each month and report to maintenance manager.
• Conduct hand and surface swab analysis and conduct the necessary corrective action.
• Escort the lab analysts during sample collection.
• Carry out any necessary investigations and corrective actions during nonconformities from lab analysis or customer food safety complaints.
• Carryout organoleptic food tests each month.
• Report any food safety issues to the General Manager.
